Editing Card Definitions?

You're actually not editing the dictionary entry in that case, just the custom definition that goes on the flashcard - if you check the original HanDeDict entry it'll still be the same as it was before. With free dictionaries, when you switch a card to "Custom" we prepopulate it with the dictionary definition, but due to copyright concerns we don't currently allow that with paid dictionaries.
It's unlikely we'll be able to support editing of built-in dictionary entries anytime soon, but in 2.1 we will at least be adding the ability to keep / edit the definitions from a few paid dictionaries when you switch them to custom cards (along with letting you include those definitions in exports) - we'll tentatively be supporting that in the two ABCs + ACE + NWP.
